It didn’t take Skil-Lit very long to ignite a following of fans. Downtown Trenton’s newest eatery serves delicious breakfast foods in a friendly, comfortable environment. Many of the most popular dishes are prepared with a Southern twist, including shrimp and grits, cheesy potatoes, and chicken and waffles.

“My father was a really good cook. He had been a cook in the Army, but at home in Houston, he made lots of BBQ dishes,” says Robert Wilborn, co-owner of the restaurant. “He passed away in December, but his culinary influence lives on in some of our Southern specialties. It had always been a dream to open a restaurant.”

Born in Trenton, Robert attended school in Lawrence and Kane College in Union, where he studied finance and management. He worked as a concert promoter for nearly a decade, as well as in restaurants in Hamilton. “I wanted to open a business in Trenton. I wanted to put my stamp on the city,” he remarks.

Robert’s business partner, co-owner Deonna Maldonado, also has years of experience in the hospitality business, mostly in clubs and nightclubs. Together they bring their own talents and goals to the table.

They plan to expand their menu, their hours and their scope, possibly adding special events such as sip and paints and poetry readings in the evenings.

For food that’s fire, and service that’s lit.

For now, their goal is to perfect every dish and make every customer experience the best it can be. So far, they are more than exceeding expectations. “We are open for breakfast and lunch, serving breakfast six days a week through 3 p.m.,” Robert says. In addition to their specialties, Skil-Lit dishes up traditional favorites like bacon and eggs, pancakes and hash browns.

“Customers comment on the positive energy, great staff and friendly service. We want people to feel like they are at home when they come in,” he adds.

Skil-Lit is open Tuesday—Friday, 7 a.m. to 3 p.m., and Saturday and Sunday from 8 a.m. to 3 p.m.
